We can’t wait for you to try these keto marshmallows, they are all the taste and flavor of a traditional marshmallows without that sugar!

When we first realized how much sugar and carbs are in a marshmallow, our sadness could not be contained. It just didn’t seem fair.

Do you remember your first S’more? We do. Ooey gooey and all hopped up on sugar, those memories are bliss.

Have no fear though, those ooey gooey memories can live on without messing up your WOE.

S’MORE IT UP

Marshmallow. Chocolate. Keto Graham Cracker.

These may seem like they would be on the no-fly list for low-carb diets. But we have the hookup. Just be sure to mindful of portions. (As always)

All you’ll need for these sugar free marshmallows:

  • Unflavored gelatin
  • Warm water
  • Powdered erythritol ( or another favorite powdered sugar substitute of your choice, see our low carb sweetener conversion guide to help! Best to use ones that are a close 1-1 ratio.)
  • Sea salt
  • Vanilla extract

All comes together to make the perfect fluffy treat – aka Keto marshmallows.

  • Add some low carb graham crackers and we are in business!Â
  • Low-Carb Chocolate Bars finish the dynamic trio for a perfect S’More.
  • Add different flavored extracts and food coloring to change the flavor of the marshmallows.

Some key details to help assure your keto marshmallows are a fluffy success.

  • Coat your sharp knife in powdered sweetener before cutting into your marshmallows
  • If the dough is sticky, dust the marshmallows in a little erythritol to prevent sticking during storage.
  • Be sure to use an air-tight container for storage of your Keto Marshmallows.

Ingredients

Instructions

  • Place 1/2 c of the warm water into a large bowl. This needs to be large enough as you'll be mixing the marshmallows in this bowl. Otherwise, you'll have a mess!

  • Sprinkle the gelatin on top of the warm water and whisk until incorporated, set aside.

  • In a medium sauce pan, place remaining 1/2 c of water, powdered sugar substitute and salt over medium low heat. Whisk the ingredients until it becomes translucent. Remove from the heat as soon as you see bubbles begin to form.

  • Pour the warm mixture into your large mixing bowl. Using a hand mixer or stand mixer with a whisk attachment, whisk for 15-20 minutes until the color changes from light brown to white, you have a little air in the mixture and forms stiff peaks.

  • Place parchment paper in a 8x8 baking dish.. Dust with powdered sweetener to help prevent sticking.

  • Pour marshmallow mixture into prepared baking dish and refrigerate overnight. The dough should become firm and not sticky on the top.

  • Remove from the pan using the parchment paper. Coat your sharp knife in a bit of powdered sweetener and cut into your marshmallows, making 16 squares. If the dough seems a little sticky, you can dust the marshmallows in a little more erythritol to prevent sticking when storing. Store in an airtight container.

Notes

Please note that there are 216 grams of sugar alcohol in the entire recipe and should be subtracted to get your net carbs. If you split the recipe into 16 marshmallows per the recipe 13.5g of sugar alcohol should be subtracted off the nutrition label per serving.

      Depending on the outside temperate IMO. I’ve left these on the counter for days in the winter.. it the summer they definitely get a little ‘moist’ but a little campfire might solve that problem entirely! Lol

      Since this post we’ve also made the transition and prefer monkfruit ourselves too. I haven’t tested this recipe out yet with it though so can’t say for certain but would be surprised if it didn’t work out.

      We were able to ‘crisp’ them up over our stove top. Didn’t have the chance to test and roast over a fire though.. which they definitely get soft and gooey quick so I can see a marshmallow being dropped into the fire pit quicker than a traditional marshmallow would. LOL

      Mmmmmm I’m not sure! I haven’t tried it but I actually think it would work based on the texture of it once it hardened. So melting it back down.. yeah I think it could work.
